Yummy Salad...

So tonight I got home from the attempt at the gym (it was closed...ugh!) and hitting up 4 stores (Bi-Lo, CVS, Publix, Wal-Mart...bleh!) and I was STARVED.  I didn't plan the evening very well.  It was 9:30p and I hadn't even had dinner yet.  I needed food FAST, but I didn't want to binge on a bunch of high-calorie or high-carb foods this late.  Thankfully David had my 3 eggs boiled, so I quickly scarfed those egg whites down.  Then what?  I looked like someone who hadn't eaten in days scavenging the cupboards and the refrigerator for something quick and "healthy."

So David said, Have a salad!  No, thanks.  That just didn't sound like it'd be filling enough.  Well, another peek in the fridge and I decided, Okay.  I'll have a salad.  There's nothing else quick enough anyway!

It was the best salad I've had as far as a quick, plain salad goes!  Why?  Because we used my sister-in-law's method of putting the lettuce in a container with a top, adding the dressing (I used only 1/2 the recommended amount of Italian dressing since the fat content is so high), covering the container and shaking it to coat every little piece of lettuce with that yummy dressing.  Then we added a few of those roasted salted almonds, and VOILA!  Every single bite had that yummy dressing on it, and those almonds added the touch of crunch that I needed to fill me up that little bit more.

I highly recommend you try your salad this way!  It's easy, and you can finally use less dressing without sacrificing the taste!

  1. Being a BIG salad eaters that we are.. I'm gonna try that.. Never even thought about doing that.. hum... Mom's can still learn?
